I enjoy breakfast in Italy. Italians don’t really eat much for breakfast. Maybe a “brioche” either “empty” or filled with “crema” or “riso” (yes, a creamy rice filling). What I like for breakfast is the little square of focaccia stuffed with a slice of prosciutto you can buy at most bars around here for 1€ or so. In the Lunigiana, you can often get a slice of torte di erbe, a thin pastry crust surrounding a cooked vegetable concoction and served warm.
But at home, I often have leftovers I can make into something that mimics the heft of an American breakfast. Like a slice of left over polenta topped with Gorgonzola and a poached egg, with my focaccia sandwich on the side, in this case with a soft, lightly smoked salami.
Ok, it’s not a real Tuscan breakfast, but a fantasy Italian breakfast thought up by a crazy ‘merican. Looks good, eh?
